Essence Noir 2015

FRANCIACORTA EXTRA BRUT MILLESIMATO

Pinot noir pure vinified in white able to transmit its complex aromas to the wine, conferring body, persistence in the mouth and elegance. Rest on the lees for at least 40 months.

Type of soil: Partly of morainic origin, loose, drained and with an abundant skeletal texture.
Type of grapes: 100% pinot noir.
Yield per hectare: 100 quintals per hectare, with a yield maximum allowed in must of 55%.
Vintage: Millesimo 2015 is a result obtained by the wise union of the best grapes of this vintage: the use of pinot noir, vinified in white, contributes to obtaining a good body, without affecting elegance and the finesse of the chardonnay.
Harvest: Between the end of August and early September, when the grapes have reached the correct sugar ripeness, but still have considerable acidity and freshness.
Maturation: Over 42 months from harvesting, of which at least 36 on yeasts. After disgorgement, the bottles rest in the cellar for another 5-6 months.

SENSORY CHARACTERISTICS
Colour:
Rich, copper-tinged straw-yellow colour.
Palate: Involving, full and intense body.
Perlage: Fine and persistent, soft, delicate and creamy mousse.
Food pairing: Ideal with elaborate meat and full-flavoured fish dishes.
Serving temperature: 7° – 8° C.
